It's really personal preference! I belonged to a smallish guild that had speakers two months in a row. The first one told us she cuts her binding 1 3/4ths and gave her reasons. The next month the speaker said she cut hers at 3 inches and gave her reasons. Do what looks good to you!

Double fold binding is still only one layer thick. It just means both raw edges are folded to the center. Single fold binding means one raw edge is folded to the center.
