It depends on a couple of things:
1. The size of the project. For small projects I prefer 2.25 but for a large quilt probably 2.5.
2. The amount of fabric I have to bind. Sometimes it has to be narrower in order to use the color I want without another trip to the store.

I actually cut it 2 3/4" sometimes and move my needle 1 stop to make a wider 1/4" seam. The finished binding is the same width. I did it a couple times to hide my oops on the edge and liked it a lot so I've done it that way a few times now. I still use 2 1/2" sometimes, but never narrower.

I cut at 2.5" and fold in half. I Sew it onto the front by machine using a 1/4" foot and whip it down on the back by hand. I enjoy hand work and I love the clean look of the binding with no visible stitching:-)
