CARAMEL APPLE PUDDING

6 large cooking apples
1/2 c. sugar
1/4 c. water
1 c. brown sugar
1 c. flour
1/4 lb. butter
1 tsp. vanilla
Dash of salt
Few crushed nuts
--Peel apples, slice thin. Put in shallow baking dish. Dissolve 1/2 c. sugar with 1/4 c. water and pour over apples. Mix as for pie crust, the flour , butter, brown sugar, and 1 tsp. vanilla. Spread over apples. Sprinkle dash of salt, a dash of cinnamon and nuts over apples. Bake at 350 degrees for about 50-60 minutes. Serve warm with ice cream or whipped cream.
A good recipe, but I would skip most of the sugar in the apple layer, if not all of it. And half the brown sugar would be plenty. We need to cut down on sugar as much as possible. It never does a body good.

If you are using tart apples like Granny Smith, then you do need some sugar or sugar replacement. However, a lot of the sweet apples, like Gala, Pink Lady, or Honeysweet will hold up really well when baked and are sweet enough where you need to use little or no sugar at all.

Sugar is my favorite food, but is my worse enemy. It exacerbates my psoriasis and reddens my face and puts weight on me. So I am looking for ways to make recipes without sugar.

thanks to all. just made some apple crisp. i used two cans of apples (comstock brand) and oatmeal cookie mix. brown sugar, two small packets of granulated sugar on top. loved it! can be served with ice cream, by itself or with milk. all one's own choice. baked about 45 minutes.
