Best coating for chicken fried chicken
30 saltine crackers <label class="checkList__item" ng-class="{true: 'checkList__item'}[true]"> 2 tablespoons all-purpose flour </label> 2 tablespoons dry potato flakes
1 teaspoon seasoned salt
1/2 teaspoon black pepper
Add all to food processor.
I add cayenne instead of seasoned salt just because I like the heat.
Dip flattened chicken breasts in egg. Then coat with crumbs. Fry in oil. I found it on Allrecipes.
They sell white gravy mixes at our local store that I use for topping. Left overs make good sandwiches.

My DIL gave me this recipe and we really like it. 1 sleeve of ritz crackers, 1/2 cup Parmesan Cheese, 1/4 t. garlic powder and 1/4 t. Pepper. This is a good topping for frying or baking. I decided one day to add the crumbs from the cheese it bag. We really liked it, so now I always add cheese it's. But I also add any other cracker crumbs that are left in the bag. Makes for some interesting topping, but I can't duplicate it as I never remember what I have put in it. I also use chip crumbs sometimes for frying and baking chicken.

I use jiffy corn muffin mix (dry)
Cayenne pepper
Garlic
Sometimes Ritz crackers, Panco whatever I have on hand
Dip in buttermilk instead of egg
Company always ask me to make it if they are coming over for dinner.
I know it sounds strange to use muffin mix but it's really good.
