Your favorite leftover turkey casserole, please??
I need a turkey casserole tomorrow. The consumers will be two men. Any ideas? I have one that is layered with stuffing, but one of the guys isn't a big sage fan. He may get it anyway - I'll just go easy on the seasonings.

My mother used to make this casserole with either chicken or turkey.
1/2 can chow mien noodles on the bottom of casserole dish (large can)
2 cups diced chicken or turkey, cooked spread over noodles (use more if needed to make a good layer on the bottom)
1 1/2 cups diced celery spread over turkey
1 bunch green onion, chopped and layered over celery
1 can cream of celery soup mixed with 1 can of water, pour over contents in casserole dish (I like to add seasonings such as basil, garlic powder, parsley before putting in the pan)
top with remaining chow mien noodles and press into the ingredients layered below so they get some of the moisture
Bake at 350 for 45 min to one hour (it should be bubbly and the edges browned)

Our favorite turkey left over dish is Turkey Gruel. (Not sure how it got that name, but it is really turkey stew.) I always cook the turkey carcass for the broth (we don't eat the drum sticks or the wings, so cooking them down for the broth along with the carcass.). Then I use the broth to cook the onions, celery, potatoes, and carrots, when they are ready I add the turkey and thicken the broth with flour and milk. I usually season it with poultry seasoning, sale, thyme, salt, and pepper. When it is thickened then I add the frozen corn and peas. It's one of those dishes you just add what ever sounds good. My DD likes it served over rice but sometimes we use biscuits - it depends what we have. My DH just likes it the way it is. I may need to get some chow mien noodles - they would make a nice crunch.

TURKEY POT PIE. Easy.
Pre-made pie crust unbaked. Thawed. ( Pet Ritz)
FILLING: mix in a bowl....
chopped turkey ( or any fav meat). ( whatever fits!.. maybe a cup or so)
large bag of mixed veggies.
1 can of your fave creamy soup. ( cream of celery, creamy of mushroom, etc. ) Only 1 can...not "each.
1/2 soup can of milk
put the bottom pie crust into a pie pan. I LOVE my Pampered Chef stoneware pie pan!
pour the mixture into the unbaked pie crust. SprInkle with pepper or your fave spice. I add some celery seed too. Top with your fave shredded cheee...I like the taco mix cheese?
put the top crust on a poke a few holes in it. The filling will bubble through to indicate that it is done.
bake 30-45 mins. 350. Let it sit 5-20 minutes before serving. I tastes better the day too. You could make this a day ahead too.

We were at friends for leftovers this past weekend.
Mashed potatoes on the bottom; whatever veggies you have leftover; turkey for next layer - add a bit of gravy; stuffing on top with a bit of butter to brown. Since I'm not a stuffing person, I had more mashed potatoes on top. Her DH had sweet potatoes on the bottom layer vs mashed.
All worked well, was delish and got rid of tons of leftovers!

I can see I am making two casseroles. One for the guys tonight and one for leftovers tomorrow with the children. All of these sound so good. Thank you, everyone.
NJQuilter - will keep this in mind for Christmas. I have dinner here on Christmas with more children coming the next day.

To NJquilter: I do something really similar. My favorite is layer turkey/chicken/cooked ground beef (choose one) on the bottom of a 9x13 Pyrex dish, add spinach layer, mashed potato layer and put grated cheddar cheese on top. It is one of our favorite dishes. As you said, any left over vegetables will do. It is similar to Shepard's Pie.

Mix well and pour into pie shell. Top with extra pie shell.
Bake 350 oven about 35-40 min.
