    One of my favorites! Dont say yuk until you've tried it. Bread it like you would any other fried veggie and fry, I slice mine long, fits the bread better that way. Fresh tomato from garden, not fried and not green, a little garlic, pepper jack cheese and grill that baby! Oh I'm in heaven this morning......Yummy. Oh i forgot, low carb bread....LOL you gotta make up for the cheese and the cuke!

    Sounds like something to try. I like fresh tomato and cucumber sandwiches, but never tried this way. Yum!

    Could it be grilled without frying the cuke first? It sounds delicious. Thanks for sharing! :-)

    Oh yes grilled cukes are great! We coat them with house italian dressing, delicious!

    My faborite....grilled pineapple and grilled tomato sandwich on toasted ciabatta bread. Yours is a close second!
