Fried potatoes

On the farm, we had potatoes and gravy many times at noon. Mother purposely boiled extra potatoes because supper was leftovers from noon and she sliced and fried the cold potatoes. I love fried potatoes but mine never tasted as good as hers.
Today a light bulb went on ! I mixed cold sliced potatoes, thin slices of onion, salt and pepper in a bowl then drizzled on olive oil (or melted butter) and dumped this on the grill for frying. Worked so much better than heating oil in a pan and adding potatoes.
I like having cold cooked potatoes in the refrigerator. And hard cooked eggs too. Creamed potatoes, fried potatoes or potato salad. Egg salad sandwiches. You can’t go wrong !

Carbs change when the food is cold or frozen and better for you, you can look it up as to why. I keep baked potatoes in the fridge most of the time. Slice and fry them single layer with bacon grease in a cast iron skillet until crispy. Fries good with olive oil too. I buy the package of hard boiled eggs instead of boiling my own and keep a package or two in the fridge. I like egg salad sandwiches. The pre boiled eggs are such a time saver.

OneBeGone, you say the cold changes the carbs in potatoes. Does it add or subtract the carbs as I love potatoes anyway I can get them and this would be great to know. Right now I'm on a special diet so I can't have any potatoes this week but I'm almost over this diet so I can get back to my favorite foods but in moderation. I find weighing my foods helps me from eating too much of one item. And I found I like these wrap type sandwichs too.

Sound like we have some potato lovers here. Remember in Forrest Gump and the log list of dishes that Bubba could name made with shrimp? Well bet we can all do that with potatoes! It is fun to start naming all of the glorious ways a spud can be turned into yummy delishishness! Ahhh, I am ready for potatoes right now.

Here's a use for potatoes as 'prescribed' by my Dentist. I was having repeated pain in my jaw, so made an appointment to see my Dentist. She diagnosed GERD from the discoloration on my teeth. Then she recommended that I boil a potato and drink the potato water to treat it.
My Dr prescribed Pepcid; I was SICK for 4 days after taking it.
So now I use potato water. But I cheat and use a teaspoon of mashed potato mix in a glass of warm water instead of boiling a potato. Seems to work.
It probably helps that I cut way back on Ibuprophen...

Commenting on Onebyone's suggestion on the boiled eggs.
Other than appearance and texture, I microwave eggs for use in egg salad and other salads. That saves time for me. Do be sure to break the yolk before putting it in the microwave though. A minute in the microwave, stir just a bit to see if it is cooked thru. It's almost ready to use. About the only reason to take the time to boil an egg is for deviled eggs or if you are wanting the appearance factor in other salads. Most of the time, you are going to chop them or break them up anyway and this is quick and easy to do.

I started poaching the eggs I use in potato salad. Just heat up my big chicken fryer with water (I do add the bit of vinegar), crack a bunch of eggs in it, cover and let sit. No peeling! Can also do in the oven, but I usually do range top. I have the clear pan lids where I can see how things are going.
And I love potatoes, I am going to try some experiments with them to see how they affect my blood glucose nowadays. I think I can probably handle a potato every now and then...

Keeping boiled potatoes and eggs ready in the fridge does make everyday meals quicker and tastier.
