Default Healthy Recipes for the New Year

What healthy dishes are you cooking up in the New Year? I am looking to reduce a couple of pounds from the many visits I missed at the YMCA during the pandemic.

I have been trying to lose the same 20 lbs. for it seems like 20 years. I decided that this year to forget about losing and just stay healthy. I am upping my physical activity as much as I can within pandemic guidelines. I will try your soup recipe as soup is a favourite of mine.

Thanks for the soup recipe, jmoore. I'm always looking for recipes that use kale. A bag lasts forever in our house!
I like soup, too, for health and weight loss in winter. It's hard to get a salad that tastes fresh, so soup seems a good way to incorporate lots of vegetables and healthy beans. I often just make a variation of minestrone with anything that might be available in the refrig.

I agree Mkotch...it is difficult to get fresh salad fixings this time of year so why not get the healthy vegetables in form of a warm soup.

Coffee is always good. I love it in the morning and I love it in any kind of baked goods...like coffee flan...yummmm.

2 weeks ago DH & I gave up pasta, rice, bread, potatoes, grains, sugar, bananas & anything else high carb. My middle & ankles are already thanking me & it’s refreshing to have clothes fit a bit better in just a short time. We aim for around 50 carbs (give or take) it’s not that difficult (so far). A Shamrock Shake has about 2 days of carbs ! When running errands we stopped for a “sub in a tub” (no bun) yesterday and there was enough for me later too.

I still eat whole grain bread, baked sweet potato (I can eat that plain, no butter or brown sugar needed and I usually eat just half of it.) I just keep trying to keep my protein up and add in the veggies....usually at least double the veggies. I also add in nuts and sunflower seeds to things when I can. I use plain yogurt but add my own sunflower seeds and blueberries. These changes have helped my blood sugar....but still am finding it hard to lose the weight.

Snacking is for me, a very, bad habit. I repeat, a very, bad habit. I get up super early, so around 2PM, my body says it's time for dinner. I try to hold off, but instead, I snack...along with my dogs...they snack too. We all snack, usually on almonds, raisins, popcorn, etc. Those are not terrible snacks, but they are high in calories.

Yesterday, I cut up some Brussels Sprouts, threw them on a sheet pan, coated them in a tiny amount of olive oil and some seasonings and roasted them in a high oven until crunchy on the outside and soft and creamy on the inside. They were delicious! The dogs loved them too.

Almost any dish with beans, so long as they aren't sweet, is a good filler-upper. I like Garbanzos, with spinach, lite coconut milk, a little veggy broth, maybe some chopped onions and a dash of Garam Masala and Curry powder. Excellent over brown rice.
