Default Lemon Cake like the Orange Cake

Loved the Orange Cake with almond flour! So, I boiled 3 lemons for 60-90 minutes (72 to be exact) and create Lemon Drops. I dropped the batter by teaspoons into the small muffins pan and cooked 15 minutes at 350.

3eggs
1 C almond flour
3/4 C Splenda
dash of salt
1/2 teaspoon baking powder
3 boiled, pureed lemons

PS. Key Limes did not work. Bitter after 90 minutes of boiling.
Made one batch of "lime drops" that were terrible. Tossed batter and told DH that they were for the chickens, if they would eat them. --He thought I was joking, and popped one into his mouth. He tried to be nice about them, but I told him I was serious about the bitterness. He agreed!

Ha ha! I've made a few things like that. Even the dogs leave the house because they're worried I might feed it to them. My hubby is a very, picky eater...almost anorexic...like his mother was. It drives me crazy. Anyway, if it's the least bit off, he won't touch it. Last night I made egg drop soup and added just a tiny bit of mirin to it. Nope, he wouldn't eat it. I thought it was delicious.

Thanks for the orange and lemon recipes with almond flour. My lemon trees are going off right now and so are chickens with their eggs. I've got to make up some stuff and put it in the freezer. I might try this.

OK. I didn't give up on lime flavored cakes. Since I had a bag full of key limes, I just juiced 10 limes and used it instead of cooked fruit, and it turned out well.

Also tried replacing boiled fruit with 3 bananas. Oh yeah!

My favorite so far is the lemon.

Used one can of pumpkin instead of fruit and added pumpkin spice. Also hid one dark chocolate chip inside each mini muffin. Deeeeelicious.
