Our standard dessert is sour cream sugar cookiescut out in the shape of a bunny--been making these for nigh on to 50 years. I use Betty Crocker vanilla icing and place a red hot for the eye. ( My niece even wanted me to make them at Christmas (LOL))
However, last year I had extra people and made a pistachio dessert that is very good:
Pistachio Pudding Dessert
CRUST:
1 stick butter
1 c. flour
1 c. chopped walnuts
1. Mix butter, flour, and nuts; press into 9 x 13 inch pan.
2. Bake at 350 degrees for 20 minutes. Cool.
FILLING:
1 c. powdered sugar
1 (8 oz.) pkg. cream cheese1 c. Cool Whip 2 pkgs. instant pudding3 c. milk
3. Mix powdered sugar, cream cheese, and Cool Whip. Spread on cooled crust
4. Beat together pudding mix and milk until thickened. Spread on cream
cheese layer.
5. Top with a layer of Cool Whip and chopped walnuts. Refrigerate
(I use chopped pecans)

For me, lemon pie or coconut pie seem good for Easter. And fresh strawberries seem to say "SPRING!" If fresh berries are in the store, I agree that strawberry shortcake would be great, or strawberries spooned over slices of angel food or pound cake with whipped topping. Let people assemble their own. The suggest of the Strawberry Pretzel Salad is also great...everyone seems to like this! If you google it you'll get lots of recipes.

Chocolate delight....sometimes called "Fat Man's Pie"...I double the recipe and instead of using all chocolate pudding, I use half chocolate and half vanilla. Very easy but very good.

How about a trifle made up of angel food cake, cherry pie filling or fresh strawberries layered with vanilla or custard pudding and ending with cool whip ? My family really loves home made trifles: use chocolate pudding with crushed cookies or candy bars like butterfingers, baby ruth or Heath bars. You can use white and yellow and devil food cake mixes and add whatever you like. My family goes nuts over these and I just put together flavors that I think will work.
