Ingredients
1 cup quick-cooking oats

1/4 cup fat-free half-and-half
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
Directions
In a small bowl, combine oats and water; let stand for 20 minutes. In a large bowl, combine the sugars, applesauce and eggs. Add oat mixture; mix well. Combine the flour, baking powder, cinnamon, salt, baking soda and nutmeg; gradually add to batter and mix well.
Pour into a 13-in. x 9-in. baking pan coated with cooking spray. Bake at 350° for 25-30 minutes or until a toothpick inserted near the center comes out clean.
In a large bowl, combine frosting ingredients; spread over hot cake. Broil 6 in. from the heat for 1-2 minutes or until lightly browned and bubbly. Yield: 15 servings.
And, can I ask how old you are? That was my first cake I ever made at home and my mother gave it to me!! I was 18 years old and learning to cook. LEARNING!!! I am 61 now.

You know how old I am ,when 61 seems young :)I was 72 in December & look every day of it!
And, can I ask how old you are? That was my first cake I ever made at home and my mother gave it to me!! I was 18 years old and learning to cook. LEARNING!!! I am 61 now.[/quote]

My review of the oatmeal cake.I used SF applesauce & otherwise followed the directions.The cake was more dense & used a bit more cinnamon than I care for.I'd cut that to a scant 1/2 Tsp.I think one cup total of sugar....half each brown & white would be enough.
The applesauce kept it from drying out & the cake stayed moist till DH ate the last bite.

Gosh, I had forgotten all about this recipe. I didn't have applesauce so I added two cups of apple chunks and a couple of tablespoons of butter to the boiling water and it is now my dh's favorite cake recipe.

Glad it worked for you. I use applesauce ,but DD usually uses plain canned pumpkin.
