1 cup packed brown sugar
1/2 cup unsweetened applesauce
2 eggs, lightly beaten
1-1/2 cups all-purpose flour
2 teaspoons baking powder
2 teaspoons ground cinnamon
1 teaspoon salt
1/2 teaspoon baking soda

1/4 cup fat-free half-and-half
2 tablespoons butter, melted

My review of the oatmeal cake.I used SF applesauce & otherwise followed the directions. The cake was more dense & used a bit more cinnamon than I care for.I'd cut that to a scant 1/2 Tsp.I think one cup total of sugar....half each brown & white would be enough.
The applesauce kept it from drying out & the cake stayed moist till DH ate the last bite.

Gosh, I had forgotten all about this recipe. I didn't have applesauce so I added two cups of apple chunks and a couple of tablespoons of butter to the boiling water and it is now my dh's favorite cake recipe.

Glad it worked for you. I use applesauce ,but DD usually uses plain canned pumpkin.
