You can bake the phyllo cups first and then fill with anything cold as long as it isn't too juicy. If you want savoury, try a crab or shrimp salad or some cream cheese topped with a swirl of smoked salmon, some minced sweet onion and a few capers. For sweet--the sky's the limit. Lemon curd, some custard topped with fresh fruit, chocolate pudding topped with whipped cream and maybe some crushed candy canes.

It is easier to put the phyllo dough into the cups and bake first because you will know that they are baked thru. Rather than filling the unbaked phyllo cups and hoping that everything is set.

Okay now I'm hungry.

Great idea! I just made lemon curd today in my Instant Pot - so simple!

You could also do roasted veggies chopped and then mixed with a bit of cream cheese or ricotta cheese.
