Default Soup

It was 0 degrees when I got up this morning so I put a huge roaster of beef barley soup in the oven. Added cabbage with the other stuff & it smells so heavenly, I just want to jump in there !!

I love making chicken soup from scratch. A big bowl with some lovely biscuits on a cold night. Oh boy!

I'm with you. Nobody else in my family loves soup like I do, so I seldom make a big pot, but when I do I certainly enjoy it.

I have discovered that ox tail soup in the InstaPot is Heavenly.

Of course, I had to put my foot in my mouth first. The butcher told me the price for ox tail, which was astronomical and I had to say, quite loudly..."Isn't that a lot for a piece of tail?!" Got quite a few chuckles from the people standing nearby at the market.

Anyhow...enjoy your soup!

At the end of the week, I like to saute some garlic and onion, and put in the crockpot with all of my leftover vegetables from the week, and whatever meat I happen to have on hand (or pressed tofu). If I have any, I will also add beans, rice, pasta, and/or barley. Pretty muc h anything that is sitting in the fridge. I fill up the breadmaker and set the timer for suppertime. Not only do I almost always get a delicious soup, but I use up food that might otherwise go to waste, and I have a day where I don't really have to worry about making supper.

My family calls it "Peasant Soup". We used to call it "Scrappy Soup" because, much like my scrappy quilts, I make it out of leftovers, lol. Then, one day, my mother (who does not eat leftovers) refused to even taste it, saying she was "not some kind of peasant who could not afford real food".

Now I'm craving soup and fresh bread.

I think we've all got soup on the mind with this cold weather making it's way across country.. Last week while in California my sister-in-law made a wonderful soup called Brazilian Shrimp Soup - it was very easy and incredibly tasty! Served up with a nice ceasar salad and garlic toast.. mmmmm...mmmmmm.. good!

Love my crock pot potato soup! Rich, warm and goes well with fresh bread! Perfect for a cold day in January or February or.......
