Stuffed Pepper Soup
2 lb ground beef, browned with an onion
1 28 oz can tomatoes - 1 28 oz can tomato sauce - 1 lg can tomato soup
2 c cooked rice (I add 1C raw if I am using the crock pot for the day)
2 c. green pepper chunks - 2 beef bullion cubes dissolved in hot water
1/4 c. brown sugar - 1/2 t. salt - 1/4 t. pepper,1Tbl vinegar

Can also add barley. After browning the beef, I normally put everything in the crock pot and cook on low for several hours.

Just a guess....I'd say 8 servings.For the 2 of us,I'd cut ingreds in 1/2.Use same amt of sugar,vinegar,1/2 C rice.Taste & adjust seasonings.You can add diced celery & shredded carrot if you want.

sounds good! I make something similar in the skillet and call it "unstuffed peppers". I will definitely try this recipe!

Do you mean all the tomato choices or pick one of the three? This sounds like a keeper recipe with the cold weather breathing down our necks. Thanks.
