What To Do With Cauliflower That's Gone Awry?

I came back from vacation to find that the cauliflower in my garden had bolted. Augh! I cut off the sprouted head and brought it in. It sat there for a couple of days, while I tried to figure out what to do with it. Finally, I cut off all of the tiny florets (1/8" in diam.) and put them in a pot of salted water to steam. I then drained them, put them in the food processor and added some eggs and a bit of Indian spices. I poured it all in a hot, flat pan with a little oil on the bottom and made a super, yummy fritatta! I dressed it up with some simbal hot sauce. As for the cauliflower stocks left over...they went into the veggie broth stock pot.
I still have some mini florets left over...what to do with them?

There are recipes for cauliflower now. It is supposed to be low carb and substituted for potatoes in several recipes. I have even seen pizza crust made from cauliflower. Pinterest seems to be overrun with it.

I cook the florets until tender and then cover with good quality jarred Alfredo Sauce. No carbs. It stops my craving for pasta. I also mash cooked florets with cream cheese and season like mashed potatoes. I saw cauliflower flour in the store. It was very expensive about $9 for a small bag. That makes no sense I buy whole fresh cauliflower and cook until tender in the pressure cooker, cool and freeze.
