I usually don't like leftovers either! There are exceptions though. My hubby just made a huge pan of gumpkis (cabbage rolls) and I could eat those things every day. He says I'm like my Dad and I am. I usually don't want leftovers.
He loves to make soups in the winter but he makes enough to feed our whole city haha!! He can't seem to remember that our boys don't eat with us every night anymore. He almost always cooks enough for an army and I mean on a daily basis.

I'm very happy with leftovers for 2-3 days, and/or transforming what's left into different things. Hubby was always soup/casserole tolerant and liked having the big all you could eat pot -- but he is fussier now with his ketovore/extremely low carb eating. I can usually make a base that I then add my small amount of rice or pasta or whatever in a separate dish. When I do cook the large amounts of brisket or pork roasts, we typically keep out 2-3 days worth, and freeze 2-3 days worth.

Tonight is hubby's bowling night and he won't have a lot of time home. We had some steaks we bought on Saturday we were going to freeze but that didn't happen, so 3 of them are marinating to become Carne Asada, and the other two are marinating to become more Asian inspired, think non-sweet (keto friendly) teriyaki. Teriyaki steak I will grill today with the grill hot and all that but they will be for tomorrow. Is leftover steak still a leftover??

We also have some Italian Sausages from Costco. I cut up some marked down peppers and an onion, and have that ready. can go with the Italian sausage or sort of fajita style with the Carne Aasada.

I'm hoping to head into town tomorrow for Day Guild meeting and grocery shopping (hoping the weather cooperates!) So tonight is clean out the fridge aka Stir Fry. I have been experimenting with making my own sauce using the 4 S's--salty, spicy, sweet, sour. Soy sauce, hot red pepper jelly (counts as spicy and sweet) plus rice wine vinegar. Add some chicken stock and a bit of corn starch for thickener. Every attempt is a new adventure!

I haven't decided yet. I'm going to the gym, and there's a grocery store across the street. I'll decide what I want to eat after going through everything. Mr. Stitchnripper will be happy with whichever I decide. That's how it usually goes here. We do like leftovers, so sometimes that comes with a different side. Left over chicken noodle soup (was frozen) with a side of crackers and cheese.

We tried a slow cooker Mongolian Beef recipe last night, delicious over steamed new potatoes. And enough for tonight, yay!

Air fried pork chops, chef's salad, and a new recipe a friend gave me for a soft vanilla cake. She said it was delicious with fruit or jam.
