Zucchini Casserole

3 large zucchini, cut into cubes, unpeeled
1 carrot, grated
1 onion, finely chopped
1 can cream of mushroom soup, undiluted
8 ounces sour cream
2 cups Pepperidge Farm Stuffing Mix (16 oz.)
1/2 stick margarine or butter, melted

Mix stuffing with melted margarine. Add 1/2 of the stuffing to first 5 ingredients, put in 1 1/2 quart casserole dish. Top with remaining stuffing. Bake at 350 for 25-30 minutes. Makes 4-6 servings.
