    Onebyone and Stitchripper, your recipes sound delicious! We're having baked tuna patties with homemade tartar sauce and salad.

    I spent the afternoon going thru the boxes of quilting stuff that were gifted to me by the family of a good friend and quilting buddy. Unfortunately, she is now in assisted living and her dementia is becoming much worse by the day. Needed a no brainer supper.

    I'm soaking chicken thighs in white wine overnight to bake with Italian seasoning. When my mom made this, she called it Chicken Rolled in Grass. I have an eggplant to slice and bake with red sauce for a side.

    One of the things I got out of the freezer the other day was some bulk sausage we get from the local butcher down the way. Hubby found the concept of "keto pizza" on-line, is pretty decadent. You make the crust from the sausage - just smoosh it down, and precook most of the way ( I use rectangular restaurant style pans and line with parchment paper, bake in oven). Drain the fat and then top with whatever toppings you want. Then, back in the oven just enough to melt the cheese/heat through. We will use a tiny bit of Rao's and have a package of marked down fresh mozzarella. You can add vegies or whatever, but you might want to pre-cook them a little.

    Made the crust yesterday, so the pizza will be after bowling date. Apparently we have been getting lucky on our day/time of going to Costco, midweek, right at opening. We are fairly often getting (or sometimes just missed) some meat specials. That's how the leg of lamb got in the freezer, was already a pretty reasonable price but then something like $10 off at the register. This past week there were lamb loin chops -- the type with more than a bite on the rib bone. Again, price was pretty reasonable to start and with discount brought it down to like $3.99/lb.

    When I first met the hubby some 20+ years ago, he was what I considered a pretty picky eater. With his changes in diet he has gotten more restricted in some ways, and way less fussy in others, especially when considering things like organ meats and different animals. First time I cooked lamb (grilled over charcoal Greek style) he was rather dubious and asked if it was supposed to taste like that?? Now it is a favorite.

    Iceblossom, I found lupin flour at our local Bulk Barn! The price was pretty good and having a coupon helped. I made DH lupin flour brownies. In my opinion, they were not quite sweet enough. The recipe called for monk fruit sweetener. I only had Splenda. I am also wondering if I should have sifted the lupin flour or add just a tad less. It is ground so fine, that it seemed to really pack down in the measuring cup.

    I also found a recipe for lupin bread and a lupin pizza crust. We haven't tried the sausage pizza yet. One of these days, tho.

    Nice! We use the ground lupin which is a bit coarser. Lupin is mostly grown in Australia but pretty much a wonder plant that can grow with limited water, heat, or cold/short growing season. Same overall family but the food variety (lupin) is different than the lovely blue wild flowers (lupine) I knew in Alaska -- they have alkaloids which are not good for humans (or dogs..)

    Missouri Star sent this recipe in an email some time ago. It has replaced the one I use to use. My family loves this. I took a pot of the sauce with added chicken and cheese as a soup to my quilt group sew day and the pot was scraped clean.

    I tweaked the recipe so my changes are in (),

    White Chicken Enchiladas

    10 soft taco shells
    2 cups cooked, shredded chicken
    2 cups shredded Monterey Jack cheese
    3 (4) Tbsp. butter
    3 (4)Tbsp. flour
    2 (3) cups chicken broth
    1 cup sour cream
    1 (4 oz) can diced green chilies undrained

    Directions
    Preheat oven to 350 degrees. Grease a 9x13 pan
    Mix chicken and 1 cup cheese. Roll up in tortillas and place in pan.
    In a sauce pan, melt butter, stir in flour and cook 1 minute. Add broth and whisk until smooth. Heat over medium heat until thick and bubbly.
    Stir in sour cream and chilies. Do not bring to boil, you don't want curdled sour cream.
    Pour over enchiladas and top with remaining cheese.
    Bake 25 min or until golden brown. May want to broil the last few minutes to get a cheese crust.

    I used a big can of chicken breast when I don't have any leftover chicken.
    I did make this last night - delicious.
    Used chicken from the packaged costco what I think is leftover rotisserie chicken. Also only got enough filling for 8 tortillas - they were about 8". So next time will increase amount of chicken and cheese.

    I am cooking shrimp Alfredo with low carb alternative pasta. Not really pasta but looks like it.

    I use Hearts of Palm linguine . It's very low carb and I can eat a lot and not fill stuffed. My husband doesn't care for pasta of any kind so it's all mine!
