When we moved here, we brought up a fig tree that we had planted in a big pot and kept out on a hot, sunny patio. We planted it here in a sunny spot along a fence line. That tree must be 35 years old now and still thriving. We were so surprised that it would grow in this climate, so we planted a couple more fig trees...ok, 5 more fig trees. We are now getting huge crops of beautiful figs! So, what to do with all of these figs? I've been drying them and I've made some jam with them, but I need some more good fig recipes. Ideas please.

The fig Jam turned out amazing! No pectin was added. I just cooked the figs down with some sugar, lemon zest and "pumpkin pie spices." There are still large chunks of figs in the jam and the long cooking made the figs taste sweet and fruity.

In my research for fig recipes, I have come across various uses for fig leaves. Apparently, they taste really good after they are cooked. I first came across their use in making Fig Leaf Ice Cream. I've also seen them used in wrapping meat and veggies up, like cabbage rolls, dolmas and such. They make a nice tea and can even be used fresh in salads. Since I have 5 big trees, I'm going to experiment with them. Why not?

I make a fig cake that is good to eat while drinking coffee. I used figs I have canned. I also can them with strawberry jello and that;s good. Our son-in-law eats the canned brown (not strawberry ) figs, with his cornbread, after he finishes his meal. He has others of us trying it too.-lol My sister and I both like raw figs. A friend of ours used to let us pick figs from his tree, it produced so maky. When my sister was down and figs were ripe, she would tell me to ask my friend if we could go 'graze' at their tree. I told her we weren't cows!-lol

My latest fig invention is to slice them in half and soak them for a day in fresh grape juice and a little christmas spices. (We had grape juice left over from making wine and vinegar, so hey...why not?) After they soak in the fridge for a day, I put them in the dehydrator until they are dense and chewy. Yummmm! My new favorite snack!

I bake Betty Crocker cakes for my brother without icing because it is just too sweet with icing. Before putting in oven, I sprinkle chocolate chips. Well, I received dried dates and used them, cut in half, to also sprinkle around the batter. Delicious. Try that with your figs!

One year we had a bumper crop of peaches. I made/invented Peach-Filled Cookies. I used a shortbread recipe to cut 2 circles, filled with peaches(and sugar?), and sealed the edges. Not too much filling. They were great!
