Mixed lettuce lots of veggies. Vinegar and healthy oil or lemon juice with olive oil. Yum

I've been putting fruit(blueberries, grapes, etc) in my salads and using a vinegrette salad dressing

Your basic fruit salad: diced apple, diced orange, diced banana, sliced celery stalk, some walnuts, sprinkle apple with orange juice to keep it from turning brown, sprinkle the whole salad with tablespoon of sugar. Let sit an hour in fridge to release juices, serve and eat. Serves 2. Especially good for mid-afternoon snack.

When I want a healthy salad I use:
    3-4 T Pomegranate seeds
1/3 cup balsamic vinegar or Raspberry vinegar
    1/4 cup EVOO
    1 Tablespoon Honey
    2 Teaspoon Dijon mustard
    Salt
    Pepper

    I also made:
    6 oz no fat yougart
2 T low fat soy milk
    4-5 T Pomegranate seeds
    1 T Raspberry Vinegar
    1 t sugar

I use romaine lettuce, tomatoes, feta cheese, sunflower seeds (just a few for crunch)

One we love: Cold chicken or turkey chunks with mandarin oranges, green grapes, and either walnuts or almonds. Another: cukes, tomatoes, onion, gr pepper mixed with a little sugar and fat free mayo.

http://www.eatingwell.com/print/5811 i use chick peas instead of black-eyed peas. This is a great tasting. Get tired of lettuce and such.

Drain & rinse 2 cans of beans.Your choice of red, white, black etc.Add fine diced red & green peppers, celery & red onion. Can add any veggie that doesn't get soggy such as watcher chestnuts & chick peas.Season with S&P,garlic, italian seasoning. Add enough FF italian dressing to moisten.Mix well.Cover & refridge.Stir & taste now & then, adding drssing if needed, but not enough to make it sloppy.

Keeps very well & I often use rice vinegat & 1 TBL olive oil in place of dressing.Serve as is or on shredded greens with a bit of shredded parmesan.
