    Default Hanukkah Lunch Ideas?

    I am a chef and am putting on a Hannukah lunch for 100 to celebrate the retirement of our managing Director.

    Does anyone have any suggestions on what I should include on the menu?

    Latkes are out, as I don't have the manpower.

    Variety of bagels and variety of spreads, fruits.

    Does it need to be Kosher?

    Even if it doesn't, it's still best to adhere to some of the Kosher tenets such as no shellfish, do not serve meat and dairy products together, do not serve dairy product after you've served meat products, and use Kosher salt.

    Vegetarian meals are usually the best options as it will avoid most issues.

    Pasta with Marinara or Alfredo sauce (no chicken)
    Eggplant Parmesean (Marinara sauce)
    Pirogi's (did I spell that right??)
    Vegetable Stew
    Roast Vegetables

    Any of them can be served with a soup and salad starter

    Sufganiyot (donuts) are traditional - they are fried in oil, symbolic like latkes. Something fried in oil would be necessary, because of the reason behind Chanukah and donuts are easier than latkes. Even bought donuts are fine.
    Noodle kugel can be made ahead.
    If you can manage it, brisket. This can be made ahead too. Leave this out if you are going kosher and serving a dairy meal.
    If you want to include potatoes, potato kugel can also be made in advance. Goes with meat or dairy.

    We are going to a Thanksmaka this weekend. That's Thanksgiving, Christmas and Hanukkah all rolled into one, and held before any of the celebrations so everyone can find an excuse to come!
