    Sugar Free Peanut Butter Pie

    1 large box sugar free vanilla pudding
    Mix with 3 cups milk
    Combine 2 tbls. sugar free Cool whip with 2 tbls. peanut butter. Mix with pudding and pour into a graham cracker crust. Refrigerate.

    Fruity Sugar Free Pie
    Mix 2 small containers of sugar free yogurt with container of cool whip. Mix one small package sugar free jello with 1/4 cup hot water. Stir to disolve and add to coolwhip mixture. Pour into graham cracker crust . Chill and enjoy!

    One good thing would be to get a glycemic index of vegetables and fruits. Vegetables vary quite a bit in sugar content. Carrots and sweet potatoes are high. I use pumpkin as a substitute for sweet potatoes to make a casserole. It is a job to cook for a diabetic but well worth the effort.

    I too was recently diagnosed with Type 2 diabetes ... I'm still learning and all this info has really helped! Thank you all!

    My husband was in the diabetic range and with eating low-carb, he is now back in the "normal" range (not even prediabetic)! The best Low-Carb cookbook I have found is "500 Low-Carb Recipies" by Dana Carpender. She has written a few books, including a Low-Carb one for the crockpot. Start there, and have fun learning a whole new way to cook!

    Hit the used books stores or thrift stores for some diabetic cookbooks. There is a good site that also has daily e-newsletter. , I wish I could remember the name. Will come to me later like midnight when trying to fall alseep.

    I have 45 Low-carb cookbooks (they have lower carb recipes than recipes in diabetic cookbooks) and most of them (about 30) have come from thrift shops. Low-carb was very popular in 2004 and 2005 and I continue to find those cookbooks in thrift shops as people clean out their cookbooks.

    I'm curious about the pie shell since it contains white flour and fat. Is this a regular pie shell you are using?
