    4 whole portobella mushroom caps (about 5" in diameter)remove stems
    1/2 cup low fat marinera sauce
    1/2 cup lean turkey Italian sausage, cooked and drained and crumbled
    4 tbs shreded fat free or low fat mozzarella cheese
    2tsp freashly grated parmesan cheese
    1 tbs chooped fresh basil

    Preheat oven to 350 degrees

    Wipe the mushrooms clean of dirt. Place on baking sheet,gill side up. Spoon sauce over the cap, then sprinkle sausage and cheese. Place the mushroom in the oven and bake 6 to 8 minutes or until cheese is melted. Garnish w/ fresh basil.

    97 calories per each mushroom pizza.

    Greek Yogurt Parfait

    1/4 cup fresh strawberries
    2 tbs low fat granola
    1 cup fat free Greek style yougurt or low fat vanilla yogurt
    Combine strawberries,granola in small bowl and stir. Spoon half of the mixture into serving cup. Spoon the yogurt over the granola mixture. Sprinkle w/ remaing strawberries and granola mix.

    1 serving 160 calories

    Mini Blueberry Muffins
    1 1/2 cup unprocessed wheat bran or oat bran
    1 cup whole wheat flour
    2 Tbs ground flaxseed
    1 1/4 tsp baking soda
    1 tsp ground cinnamon
    1/8 tsp salt
    3/4 cup fat free milk
    1/3 cup honey
    1 ripe medium banana(mashed)
    1 lg egg
    2 tbs olive oil
    1 tsp pure vanilla
    1 cup fresh blueberries

    400 degree/ Bake 8 minutes

    Position rack in the center of the oven, preheat oven, lightly coat mini muffin pan w/ olive oil cooking spray.

    Mix Bran, wheat flour, flaxseed, baking soda, cinnamon and salt in one bowl

    In a blender mix milk, honey, banana, egg, olive oil and vanilla extract blend until smooth.

    make a well in the center of the dry ingredients and pour in 1/3 of the liquid mix. Using a spoon stir until smooth. Add the remaing liquid mix and stir until combined. Add blueberries and mix in w/ care. DO NOT OVERMIX

    Spoon 2 tbs of batter into muffin cup. DO NOT OVERBACK>

    Cool for 10 minutes before removing from the pan.
    Enjoy warm or room temp!!!!

    70 calories per each muffin.
