    Not a recipe, but some summer favorites. What are yours?

    We are in the middle of red salmon season here, so of course grilled salmon is a must. Got inspired last night, and in addition to the salmon we had fresh corn on the cob, mashed potatoes, fresh baked bread (hubby's specialty) fresh capresi salad and of course some fresh strawberry pie. I was still full when I woke up this morning! :shock:

    That looks soooo good. How did you prepare you salmon? and send me some of that yummy looking bread!

    The salmon is so easy. Prepare the grill.
    Put the salmon on, flesh side down. Cook for about 5 minutes.
    In the meantime, make a sauce with about 2 tablespoons of butter, a couple of teaspoons worchestershire sauce, about a tablespoon of lemon juice, a couple of cloves of garlic, pressed into the mixture and about a teaspoon or so of paprika. Heat it only to melt the butter, about 45 seconds in the microwave.

    Flip the fish, spoon on the sauce. Cook for about 5 more minutes (Canadian rule of cooking fish, 10 minutes/inch of thickness). When the fish is done you can remove it from the grill, leaving the skin on the grill. (I hate fish skin on my plate) It's easy to remove later.

    Capresi salad is so easy, just need the right ingredients.

    Small tomatoes (quartered so they are bite sized)
    Fresh motzerella (cut into bite sized pieces)
    Fresh basil

    Toss together with olive oil and balsamic vineger right before you serve it. It's fantastic!

    If you use little cherry tomatoes (best choice) then shape the motz. with a mellon baller. It looks great.

    Wow..I am really a slacker! Your meal looked wonderful and made our mouths water! (have grandsons looking on) Any chance your hubby would share his bread recipe?

    I'll get it from him when he returns, he's off entertaining an out of town guest. It's super, super simple, just takes 12 hours to rise.
