    A friend of mine walked by my job one day and popped her head in to ask me if I had plans for lunch. When I told her I didn't, she told me if I liked tuna salad she'd make some and come have lunch with me. Imagine my surprise when she walked in the door carrying a big foil pan. I was expecting tuna sandwiches. She made this tuna salad to go with crackers. It was wonderful, to me anyway. It was full of tuna, mayo, diced green peppers, chopped boiled eggs, diced sweet pickles, onions, celery, salt and pepper. We ate it like a dip with crackers. So good!

    Another .. favorite of mine is tomato and cracker salad. Just chopped tomatoes mixed with mayo or Miracle Whip, salt and pepper. Right before serving, coarsely crunch up some saltines and mix in. Tastes like a tomato sandwich in a bowl.

    I could go on and on. We love salads around here.

    Thanks for posting this recipe. Maple vinaigrette is my favorite. A local farm to table stand and cafe make and sell it. I will definitely be trying your recipe. I love fruit and a protein on my salad. Any berry or apple, canned Mandarin oranges, peaches. They are all good on a salad. I've been eating budda bowls this summer too. Which are yummy with tahini sauce.

    I hope that it comes close to the one you are familiar with.
    Play around with the ginger and cinnamon, to spice it up to your taste.
