    We are trying a new way to marinate beef fajitas using pineapple orange juice with spices. I plan to make veggie shish-ke-bobs with tomato, onion, peppers, and squash. Already have refried beans in fridge!

    Sounds great, aashley! I haven't done much with more of the al Pastor style (using the pineapple) but we just love this marinade for (beef) carne asada.

    I usually don't have canned chipotle, but I do usually have dried ancho peppers so I rehydrate and put one in, and then I use mesquite chunks with the charcoal. I'm not a huge fan of mesquite, for me it quickly gets too strong, but a couple of actual chunks of the wood on the coals makes all the difference. Just isn't the same without it.

    I bookmarked this Rick Bayless recipe for pork al pastor, could have used it earlier this week when I had a couple of (raw) thin cut pork chops that needed cooking. Would have required ingredients I didn't have so the Asian soy/ginger/heat marinade I made was because I could

    Happy Mother's Day everyone! Hopefully, someone will make you dinner tonight. However, I'm not counting on that, so I'm going to make something that I like and not to care about what they like. I'm thinking some Indian food using chicken breasts. Maybe some naan, a mango lassi and a nice herb salad to go with it. I think that I'll leave a big pile of dishes for them to clean up too.

    DH went to seafood market while DD and I went to nail salon. I did not like the texture of the sheepshead filets that we got last time because they were out of black drum, so I instructed him to stick to black drum, or nothing. He bought pompano! And shrimp. The fish was fileted fresh and was great. I made oven fries that baked while frying fish and shrimp. Then, homemade strawberry ice cream. Great Day!

    Sounds delicious! We actually did pot pie last night, but I cheated and used a store-bought crust since I was running late from work. I’ve never thought to pair it with cranberry sauce, though, that's a solid idea to cut through the richness of the gravy. We're just keeping it simple tonight with some spicy black bean tacos and whatever leftover slaw is in the fridge. Enjoy that homemade crust, nothing beats it!

    Oh...Pompano is so good! My hubby made me lunch yesterday. He worked long and hard on it. I love that he did that, but frankly, it was terrible...LOL. I told him that is was delicious though. It was the thought that counts. It was nice to sit down together and have lunch and some wine.

    I don't know what I'll make tonight.

    My husband did a shrimp boil for me and all the kids. We had a great afternoon. I made a large dish of banana pudding, and not one spoonful was left.

    I tried a pork tenderloin recipe from YT. But my own spices. The "log" piece was slowly sliced until it was one large flat oval. Then pounded flat and even. I added S/P, paprika, fresh garlic, basil leaves, and topped with shredded mozzarella. Rolled up like cinnamon rolls and tied wit string. Browned and then baked. It was good, and I will try that again. Not all YT recipes work out...
