    I made my traditional chow chow yesterday and I thought maybe you girls might want the recipe. This uses up all those green tomatos that the frost is about to ruin...

    3 large onions
    5 green tomatoes, stem ends removed
    6 green peppers (I use the red for color)
    2 cups green beans
    2 cups cauliflower broken into small flowerets
    2 cups fresh corn kernals
    1/4 cup pickling salt
    3 cups sugar
    2 cups vinegar (white)
    1 Tablespoon mustard seed
    1 1/2 teaspoon celery seed
    3/4 teaspoon tumeric

    Using course blade of food processor, grind onions, green tomatoes, and green peppers. In a large bowl combine ground vegtables, beans, cauliflower and corn. Sprinkle with salt and let stand overnight. (As you can see I don't grind my vetables except the tomatos) I just cut them up corn kernal sized)

    Rinse and drain, Combine sugar, vinegar, mustard seed, celery seed, tumeric and 1 cup water; pour over vegtables in a large pot. Bring to a boiling; then allow to boil gently 6 minutes.

    Ladle into hot sterized jars, leaving a 1/2 inch headspace. Adjust lids to just hand tighten,( not real tight). Place into a water bath and process in boiling water bath 15 minutes (20 minutes for reno's altitude) It makes 6 pints or so.

    Oh by the way four of these are already gone! LOL! Hubby must have taken them to work to share...

    I personally can't eat it. (Diverticalitus) But I used to love it. Hubby enjoys it so I make it for him and a couple friends who would scream if I didn't give them a jar or two. They always make sure I have green tomatos. LOL!

    I am thinking I will make myself some beet relish. I love pickled beets. :~) And it is pretty much a taste like that.

    Thanks carrieann! That is why I don't grind up the veggies like they asy to do.

    Hubby said a man at his work (who doesn't like pickled things) offered him twenty bucks for a jar after tasting it. LOL! It did come out good this year, according to hubby that is. The only thing I did differently was to extend the cooking time by 5 minutes and I bought all the ingredients that morning, so everything was super fresh.

    The Chow Chow sounds great....when I am able to get green tomatoes, I will certainly make it...There was a mention of Beet salad...or pickled beets...could you post the receipe? Thanks

    Sure I will! Thanks for asking. These two recipes are from the better homes and gardens canning book circa 1973.

    Know this is a late post, but wondering, do you put your spices in loose or in a bag? Everytime I use tumeric, I come out with odd colored yellow relish. Your jars are beautiful to look at and I'm sure delicious to eat.
