    I love greens raw, add some almonds or walnuts and raspberry vinagrette! YUM!!!!!!!!!!!

    I do this one with spinach, and when I'm wanting an extra treat, I add a chopped (1/2 inch dice) orange, and/or some avocado. (They're fairly cheap this time of year.)

    We also love a spinach/ pasta dish that goes something like this: In a medium to large non stick fry pan, saute a chopped onion and some sliced mushrooms in olive oil at a medium low temp. until about halfway cooked. Add some garlic powder or chopped garlic and about about a pound of chopped fresh spinach and cook til done, stirring occasionally. Stir in some pine nuts,optional, (if you can afford them!) and toss with a pound of cooked whole grain pasta such as rotini or small penne. Serve hot with freshly grated Parmesan cheese. YUM!

    Yum! You can even use baby dandelion leaves like spinach. I love them, just be sure they are not flowered, they get bitter.

    I always add spinach to my stuffed shells or rolled lasagna. I haven't done either in a long time, makes me hungary for the rolled lasagna :-)

    When I cook greens I first saute about 1 slice cut up bacon,1/2 onion cut in bite size pieces add about 1/2 clove minced garlic.when done remove from pan and add about 2 tbs olive oil to bacon grease.simmer greens in the oil when almost tender add about 6 sliced mushrooms and the onion-bacon mix. cover . when done add a little soy sauce.toss and serve.     Boil whole, cleaned kale for 2 minutes (this is blanching). Drain them.

    Saute onions and garlic (to your taste). When done, chop

    kale and add to onions, garlic, s&p. Saute another 5 minutes.

    Take a bunch of spinach leaves, wash under running water, shake out excess water, put in sauce pan. (Some of the water will remain on the leaves and this is ok. ) Cook until leaves are wilted. Place in bowl, add 1-2 sliced green onions, a tsp. of sesame seed oil, 1-2 tsp soy sauce, and toasted sesame seeds. This is better if allowed to chill for a couple of hours before serving. If you don't have green onions, use a couple of TBS. of sweet onions, finely chopped. Sometime if we're hungry for this dish, I'll use frozen spinach. (we're 25+ miles to the nearest grocery store)

    Try using turkey as your meat. Also try www.cook.com. lots of good info there.

    Yes, if you need something that has "greens" as an ingredient -I just made this "Chicken & Spinach Soup with Fresh Pesto" and it's really good. DH liked it too.
