That's a brilliant idea Darlene! I don't use a lot of oil, so I do keep it in the fridge. Then it's a pain when I want to use some, I have to wait for it to come to room temp first! Leaving a small bottle on the counter - one of those - "Duh! Why didn't I think of that?" moments!! :D
Oh, and I agree, it should NOT smell rancid!

It is my oil of choice, but once opened it does not have as long a shelf life as other oils. But, it should never smell rancid brand new.
Also, olive oil can not be used for deep frying or other high temperature cooking. It is better to use Canola oil for that.

Olive Oil has a very unique scent and flavor and the higher end brands tend to be a little better than some of the garden variety cheapies. However, none of them should smell or taste rancid. Maybe someone in your acquaintance who knows olive oil could give it a sniff to determine if it's OK.

I use olive oil all the time. The taste depends on the variety of olive used -- I have a couple that I just love. One is very fresh and grassy tasting, the other is more of a buttery taste. Both wonderful. I've tried all kinds of brands and the best I've found for an overall great oil is Academia Barilla. In my opinion, the best oils are from Italy (just make sure that the bottle says Product of Italy -- anything else isn't really Italian oil). Also, make sure that the bottle is a dark color and you store it in a dark cool place. Heat and light are not good for olive oil.

Then it is fine just eat it. I don't like extra virgin olive oil I use what says Olive Oil. The reason Extra Vigin smells that way it is from the first pressing when they make it. Then they re press the olives and that is just plain olive oil. If you don't like the taste you can alway use it on your face as a moisturizer. Just put it on before you go to sleep.
