I'm thinking about using this fabric:

Is is acceptable to ask that other colors be only green, blue or white... or all three? Or do I need to provide those fabrics too?

It would be perfectly alright! My one suggestion would be to specify if tone on tones are ok, or not ok. There's been a bit of confusion with white vs wow (white on white). IF you prefer only solids, I'd make that very clear. Hope that helps.. Also, no you do not need to provide anything beyond a single fabric unless you wish to. Most do not.

Sewbiz, you don't need to supply the other fabrics, some do who want a more controlled look to the quilt.
You can specify the one color (white or wow for instance) or multiple colors that can be used, or a specific color not to use (like what you will use for the sashing for instance, or something you just don't like) or any version of the above.
Asking for the one color (white for instance) will limit some pattern choices b/c of only using 2 color patterns, but will give a more uniform quilt. Adding more colors will give more of a scrappy look to the quilt, but allow for wider pattern selection. All up to you and your vision of your quilt.

Thanks for clarifying, ladies... I LOVE tonals and WOW. Anything that 'reads' like solid blue, green, or white.
I'll probably sash in white, but don't mind it being used in the blocks too.
