    Default Carrot cake

    First time posting in this section. I have this cake in the oven right now. One of my coworkers made it a few weeks ago and it was delicious so I asked for the recipe. I was expecting something from her grandma or distant aunt, but she sent me a link to a Trisha Yearwood recipe. Maybe it came from Trisha’s grandma. 🤣. But seriously, if you like carrot cake but not spice cake, this is worth trying.

    You may want to look up Trisha's Mac N. Cheese recipe. It is now our family's favorite.

    I bet it smelled amazing while baking. Did you use frozen grated coconut? I've never heard of it.

    While I love carrot cake with cream cheese frosting, DH is lactose intolerant and I've not found a vegan option that I like. I'm wondering if the spices of the cake and the sugar might make it good in this recipe, though. Hmmm... I think I'm going to have to give it a try.

    Our neighbor makes 2 layer carrot cakes for anyone who’s had surgery. My husband got a new hip and she brought him a huge cake. It was so good and I cut it in 4 so I could freeze the other 3.

    PeaceAndJoy .... Me Neither ... have not heard of frozen grated coconut!
    Nor, have I seen boiled and pureed carrots used in a carrot cake.
    Have always used fresh grated carrot.

    WeSing ... Thanks for sharing the recipe. I do love-me a carrot cake!! so am adding this one to the someday to make file! Also, am hoping to hear about the frozen coconut usage, or not!

    I did not use frozen coconut because I had no idea that was even a thing. I just bought regular flaked coconut.

    The cake did smell amazing while it was baking. I wrapped the layers and put them in the freezer so I could ice it tonight, but we had a change in plans and ended up not getting home til almost midnight so I will ice it tomorrow (hopefully). My sister was supposed to come for supper tonight and ended up not being able to, so we don’t really need the cake. But I’ll force myself to eat it 🤣🤣🤣

    A friend used to make a very good carrot cake that called for jarred baby food, I'm guessing that would be more or less the same as cooked & pureed (although more expensive as well).

    Dang. Now I "need" some carrot cake.

    I did modify the recipe a bit. I didn’t puree the carrots. I can’t imagine carrot cake without little bits of carrots, so instead of puréeing them I just mashed them with a fork. That left some small bits but effectively made mush of the rest.

    The cake is delicious and will definitely go on the “special occasion” dessert list.

    I am planning to use the recipe, but instead of carrots, I will try pumpkin! Will let you know results.
