LOL Yes, still peeling but also eating with the skin on. I love all the ideas and recipes. Unfortunately the freezer is full with little kumquates so no freezing. Thank you to all that shared and posted both memories and recipes.

Hope that amidst all this, you are having some good ol' fashioned french fries, at some point!!!

There is nothing tastier than fresh cut fries.

Fried potato and onions, you can add peppers. I use the mixed small colored packaged-ones. Also could fry eggs in the pan just before through frying potato mix. Makes it a one pan breakfast, lunch or dinner. To think we used to buy 50# of potatoes once a week when kids were small

I was thinking the same thing as Anniedeb. Grate up (or small dice) a bunch of those potatoes and freeze them in layers on large sheets. Then put into large gallon sized freezer bags. Now you have hash browns ready to go. If you bake them or partially cook them before grating or dicing, cooking them up will be even easier. These can also be used for those cheesy creamy breakfast casseroles, too!

I've never done this, but what about making and freezing mashed potatoes? Can mashed potatoes be frozen?

Just finnished making too large batches of the German Potato Pie. They are in the oven now. That took care of 16 more potatoes. LOL I have a bible study in the morning that is a brunch also so one will go there and the other stays at home.

I am not sure if it is supposed to but the German Potato Salad has a brown color and not from cooking. It smells good but not sure if I like the color.

Sorry German Potato Pie has a top crust that is grey from the potato turning color. Inside looks fine.
