    Does anyone have some good recipes for white fish? I am not a big fan of fish; but trying to eat more of it for health reasons. I usually fry it in a pan with a little olive oil, or bake it with some lemon or orange juice over it. Is there any other ways to liven it up a bit?

    My husband is in charge of fixing fish in our family and he often sprinkles on Old Bay Seasoning, generously. He then frys it in olive oil and it is delicious.

    I make poormans lobster....

    put fish (4 pieces) in glass cake pan with a little water in the pan along with a couple whole cloves and whole allspice and one bay leaf a couple slices of onion and about a tsp of lemon juice a little salt, pepper and garlic powder. Cover with saran wrap and microwave for about 4 min or so till fish is flacky.......... I like to turn fish half way through cooking time. melt a little butter to dirzzle over fish befor eating. Hope you like it........ everyone in our family does...... Enjoy.

    I like to spray fillets with a buttery cooking spray or brush with olive oil, then sprinkle with lemon and pepper seasoning and granulated garlic, then bake.

    I have a couple of really good tilapia recipes. I'll try to get them posted here. They are not my "originals", but I've been making them so long, I can't remember where I got them.


    Tilapia Recipe
    You will love this flavorful fish dish. Tilapia is packed with nutrients and it's absolutely delicious!
    • 1/2 cup mayonnaise
    • 1/4 cup brown mustard, such as French's Bold 'n Spicy
    • 1 teaspoon melted butter
    • 1 pound tilapia fillets, if frozen, thaw
    • 1/4 cup chopped chives or parsley, finely chopped
    Lightly butter a large, shallow baking pan, such as a jelly roll pan. In a small bowl, combine mayonnaise, mustard, and melted butter.
    Using paper towels, pat fish lightly to dry. Arrange fish fillets in prepared baking dish. Spread mayonnaise mixture over each fillet. Sprinkle each fillet with chopped chives; press down gently.
    Bake in a preheated 350° oven for 12 to 15 minutes, until fish flakes easily with a fork.

    Here's another yummy one. These are good enough for company.


    Tilapia Lemon Parmesan

    Rinse filets in cold water and drain thoroughly. Top with butter or margarine and sprinkle with lemon juice. Broil about 4 inches from source of heat for 5-6 minutes or until fish is opaque and flakes easily with fork.

    Top each portion with 1-2 T of Lemon-Parmesan Sauce; broil 2-3 minutes or until sauce puffs and turns golden brown.

    Lemon-Parmesan Sauce
    1 C mayonnaise
    2 T fresh lemon juice
    ½ C grated Parmesan cheese

    We take a big piece of foil wrap and spray it with a cooking spray. Then we layer fish first, then maybe some sliced mushrooms, sliced zucchini, chopped regular onion or green onion, chopped tomatoes and whatever else we happen to have. In the summer we put on chopped herbs from our herb garden. Then you wrap it all up and either cook it in the oven on 350 degrees for 30 - 40 minutes or we put it on the BBQ with the lid down. It is so good. My husband and I love it and he never used to like fish.

    .....I always rub a lemon all over the fish first...... It does make a difference... Then you can do whatever you want with it...(grill it with some persley or other herbs inside the cavity (garlic...You may add some hot chili if you like... ...some baked potates ( we like the tiny one) and a great salad with a cup of red wine...
    I even cook the fish with rice (plenty of herbs and some hot chili...union and garlic of course)...
    Fish is really not that bad as long as its fresh...

    My family's favorite is catfish. I buy the whole ones, leave the head on because the fish will be jucier, and remove the skin. I put one fish on a big piece of heavy duty foil, put a half tsp. of chicken bouillon in a 1/2 cup of water, stir to mix, pour it over the fish (doesn't matter if the bouillon isn't completely dissolved, it will break down during baking). Then I fold the foil closed on the top and then close up the sides. Put on a cookie sheet and bake at 350 degrees for 20 minutes. You can bake several fish, but they need to be wrapped separately with the 1/2 c. liquid in each.

    One thing to always remember when you are cooking fish is to NOT over cook it. The Canadian Cooking Method, which simply states finfish require cooking for 10 minutes per inch of thickness, at a temperature of 450 degrees F.
