Usually leftovers, sandwiches, or when it's rainy, cold, or not feeling good, ramen noodles, they are my favorite "comfort food"!

We usually eat cottage cheese with fruit and a few nuts, or a green salad with beans or a protein bar. We do eat breakfast, usually toast and oatmeal, sometimes eggs. Then we eat a healthy dinner early so we can have a snack before bedtime, we're addicted to popcorn.

my husband does not eat leftovers... we split a grilled cheese or a pan-fried burger on sourdough with sautéed onions and slice of American cheese (it's like sliding a medium-rare burger into a grilled cheese sandwich).

sometimes I make chicken wings in the oven drizzled with olive oil, sprinkled with paprika and seasoned salt then served with blue cheese or ranch dressing

I like to make what we call wild chicken salad. Make chicken salad and add all kinds of wild things - capers, salad olives, apples walnuts, what ever suits your fancy.

For Summer:
-Tuna salad with crackers or served in a tomato cup;
-A scoop of chicken salad served on a simple romaine, cuke, crouton salad with a light homemade white balsamic vinaigrette (like the one made by Potbelly's);
-Pasta salad with lots of veggies and either chicken or shrimp; Pasta tuna salad with baby peas;
-Maurice, Greek, Taco, Cantonese or Cobb salad;
-Egg salad sandwich (on occasion a fried bologna on toast sandwich) :-)
-Any leftover in the fridge.

In the Winter, soup is my go to. I have lots of different soup recipes so never get bored with the same one over & over.

I'm lucky - DH will eat any meal I put in front of him.

Some good suggestions here already. I'll be following this post to get some more fresh ideas.

Egg Beaters Frittata with leftover vegetables from the night before. I'm on Weight Watcher and make a 4 point lunch, almost every day that I'm home. Spray a pyrex glass pie plate with Pam, 7 0z eggbeaters (8 oz is another point), 2 Tbsp parmesan cheese, 2 Tbsp Real bacon bits, and as many cooked vegies as I find. Stir it together, cook 10 min in the microwave. It doesn't always take 10 minutes, it all depend on if the vegetables are cold.
