Easy Terrific Toffee with Saltine Crackers
1 c. unsalted butter, 1 c. brown sugar, 2 c. semi-sweet chocolate chips (Ghiradelli good), 40 saltine crackers Preheat oven to 325. Line jelly roll pan with foil and spray. lay out 40 crackers side by side in middle. Melt sugar with butter and let boil for 5-6 min. Pour over saltine crackers and bake for 8-10 min. Let cool for 3-5 min. before sprinkling the chocolate chips. After they melt a little, spread evenly. Let cool. I put mine on cold porch to hurry. Break into pieces or cut.

I didn't have any problems. I just made sure it was really boiling and then set the timer for 5 minutes. It took awhile to set up in a cold environment. It is not like English toffee and really hard and crunchy. My daughter (who doesn't cook) made batch after batch without a problem.

As far as I know, this recipe needs to be made with butter to turn out. I do the toffee over graham crackers and sprinkle the tops with slivered almonds. It looks really pretty and tastes so good that I only make it at Christmas.
