Default Ideas for Pork Belly/Keto

I'm trying to support my hubby in his Keto diet plan. I'm diabetic on a high protein/low carb eating plan myself. My nutritionist says I can have around 100 carbs a day, I usually average more around 60-65, but hubby is under 30 and I'm not willing to go that low. He's always been a carnivore but I'm a former vegetarian and I love my fruits and veggies! I also tend to cook low fat with lean meats and don't typically fry foods so I'm a bit challenged with this style of eating. While I am a good cook I don't want to spend all my time cooking two different sets of food, we try to overlap so we can enjoy a meal together instead of just eating at the same time.

What the hubby has found is that he is rather challenged getting enough fat in his diet. He never liked avocados but has found that he likes the little cups of guacamole we get from Costco and has that as a dip with pork rinds. Recently we found another thing he likes, pecans toasted in ghee (again, both from Costco). That smells so good and is so delicious but too many calories for my eating plan.

This last Costco trip we got some pork belly. So far I've tried two things, both successful. The first was cutting it in small pieces (1" chunks) , sprinkle with Montreal seasoning and some extra garlic powder and cook on high heat (400) for 30 minutes, turn and then cook for another 15. That gives you crispy nuggets with most of the fat rendered out. The other thing was I left the pieces larger, marinated in soy sauce, and cooked the same way/time. That was also good, the fat wasn't so rendered out.

So now I'm out of ideas with several pounds of pork belly left! Anyone have any favorites for pork belly??

Thanks for the link Feline. I did some searches myself and other than variations on what I've been doing I haven't found many ideal options for us. With Keto you have to be extremely low carb, and so many of the pork belly variations use sugar. Hubby is completely no on high fructose as well, and that leaves out many prepared sauces (especially BBQ) as well. He doesn't care for mustard or vinegar so much either.

The other issue I'm finding is the size of recipes, so many are crowd/restaurant quantities. I'm basically cooking for one person, while I can have a little bit it's really too high fat for my calorie intake. Third issue is I simply want recipes, I don't want to watch youtube videos for 5 minutes when all I want is 30 seconds of directions

BTW, he's been doing this with regular labs and doctor visits. He started about 6 months ago and while his lipid breakdown has shifted around a bit, nothing has really gone up and his weight has gone way down, losing about 100 pounds in about 7 months. True, you have to be large enough (in his case around 360) to lose that much. I have also lost about 100 pounds since my diabetes diagnosis but it took me 7 years...

My mom used to make curried pork belly. She would cook the belly until soft, (melt-in-your-mouth-soft) with small potatoes and carrots and season it with lots of curry and chutney, with a thick curry sauce. If you leave out the taters and chutney, you can adapt it to Keto. I got an Instant pot recently, and this is on my list of recipes to try.

I found a recipe yesterday and hubby said he'd try it. "Slow Cooker Pork Belly". Basically you season the meat and let it sit overnight (oops! forgot to do that, guess it will be tomorrow that I can cook, while not vital it helps the flavor get in through all that fat). Brown/sear the pork belly. Put 2 cups of veggies on the bottom of the pot, we will use brussel sprouts because we have them and is on his plan. Then it's 1/4 cup apple cider vinegar and cook on high for 4-5 hours.

He says he is willing to try it. If he doesn't like it, I'm sure the greedy little dogs will think it's great, vinegar and all!

I have friends who are using those Instant pots, RN-quilter, and most of them love them. One not so much but she takes a bit of time to adapt

Keto is really worth it. Some get "Keto flue" for a while but when they are through with that, they feel wonderful and energetic. You might check out Maria Wojcik Emmerich. She has recipes in all of her books and explains keto very well.

I requested several keto cookbooks from my local library, as well as purchasing one from Costco. I'm not fond of pork... (for the most part, it doesn't agree with me) but I love bacon. Eating eggs (cooked on their own in any way) for makes me queasy, so I think I may have an allergy or at least a sensitivity.
I've also started following some keto blogs and have a Keto pinterest board. This gives me quick reference for finding what I need. This week, I finally tried keto pizza crust (basically mozzarella cheese, cream cheese, an egg and seasoning.) My husband really liked it... I hadn't actually offered to share my pizza, though. I'm the only one on keto (13 pounds in 10 weeks.) Not an earth shattering rate, but I only have about 10 pounds to go until I'm at my ideal weight...
