    Default Zucchini Bread and Cake

    Chocolate Zucchini Cake
    1/2 cup soft butter
    1/2 cup vegetable oil
    1.75 cups white sugar
    2 eggs
    1 tsp. vanilla
    1/2 cup buttermilk (or add vinegar to regular milk, let stand an hour or so)
    2.5 cups all purpose flour
    1/2 tsp. baking powder
    1 tsp. each baking soda and salt
    1/4 cup baking cocoa
    1.5 cups grated zucchini (no more)
    Grease and flour 9x13 pan. Mix batter in order given. Fill pan and top with 1 cup chocolate chips. Bake 40 minutes at 350. Test with toothpick.

    Chocolate Zucchini Bread

    Mix above well. Stir in zucchini

    1/2 cup baking cocoa
    1 tsp. each: salt, baking soda, ground cinnamon
    1/4 tsp. baking powder.
    Mix dry ingredients together and stir into egg mixture. Mix well
    Grease 2 loaf pans and divide batter. Bake 350 for 1 hour. Test with toothpick.
    Let stand 5 minutes, loosen sides with knife and tip out to finish cooling

    2 cups shredded (not more). Evidently I didn't proof read that as well as I thought. Sorry for that!

    chocolate zucchini cake is the best! i have a slightly different recipe -- love how it tastes like dutch chocolate & you'd never know it had zucchini in it!

    I never heard of bread with 2 cups of sugar.
    And I use way more zucchini than called for. The cake gets dense, but tastes good.

    I have trouble with cake getting done in the center if I overload with zucchini. Bread makes 2 loaves, thus 2 cups sugar. I cut sugar back in most recipes I make, but I know many bakers do not.

    I made a similar version of the chocolate zucchini bread recently, and used applesauce to replace some of oil. About 3/4 cup applesauce, 1/4 cup oil....turned out great and moist.
