give her a little time. When I first started I took everything I read or heard as gospel. Then I decided that I could change it up a bit (or a lot, or do my own thing!) and still like the results. :)

I suspect she is either like this in everything, or else she is just so new to quilting that she hasn't had enough time to be surrounded with a variety of other quilter's ideas and methods. Hang in there and just give her a little "knowing" smile whenever she critizes you. I am sure she thinks she is helping you with all of her NEW knowledge. Remember you love her even with her flaws.

If I went by the first quilting class I took, I'd be cutting with scissors and piecing by hand and trying to get 14 stitches per inch.
The next year I went to a quilting getaway weekend and everyone was using rotary cutters and I promptly and purposely forgot everything I learned in that first class.

Yes, but can she quilt. You know what the say about giving some people a little knowlege; she "knows" the basics but....
You did a great thing and she'll end up realizing there are so many ways to do it all.
