    I am a soup queen - love, love. One that is always a big hit: Ham Hock/Green Pea. Throw in bag of dried peas, simmer in broth with ham hocks, onion, carrot, celery, garlic, tyme, salt/pepper until peas tender. Remove meat, break up peas (alittle to thicked). Add meat, additional carrots, celery, onion and simmer until done.
    Of course you can add or delete any of this. Good Luck - Yummy!!! :thumbup:

    I use dried green peas for Ham Hock/Pea soup. I do make lentil soup as well and use wine (red), lots of rosemary/garlic. Then top with parm cheese. I use the little green lentils and it's very (don't use meat in this one)

    Here's a VERY easy, but good one!

    Chicken and Rice Soup

    2 cans cream of mushroom soup (I used reduced fat/sodium)
    2 cans chicken broth (I used reduced sodium)
    4 small cans boned chicken, drained
    3 – 4 cups water
    4 tsp. Butter or margarine
    2 stalks finely diced celery**
    1 small finely diced onion**
    1 pint half & half (I used part low fat milk)
    2 cups minute rice
    Salt & pepper to taste.

    Mix all together; heat and simmer for 30 minutes or cook in Crockpot until rice is tender.

    ** May substitute an equivalent amount of frozen Seasoning Blend

    I make lentil with hamhocks or sausage, I actually just did it this weekend. My grandma used to make a cheese ball soup, I can't find anyone in my family that remembers what it's called or what it had.

    My kids beg me to make this soup!

    Broccoli Chowder

    2 lbs broccoli
    2 (12 oz) cans chicken broth
    3 c milk
    1 1/2 c chopped ham
    salt (optional - I don't add any because of the ham)
    pepper
    1 c half and half
    1/2 lb grated swiss cheese (my family likes more)
    1/4 c REAL butter

    Cook broccoli in 1 can of the broth for 7 minutes. Remove and chop. Add to broth the remaining broth, milk, ham, and salt and pepper. Bring to a boil. Add remaining ingredients and chopped broccoli. Heat till butter is melted and serve.

    I do reserve the cheese and instead add some to each bowl as the cheese tends to "clump" when it starts to cool off. This way everybody gets some in every bowl even the next day if there's any left over.
