I would hesitate to use iron-on interfacing on old fabric. Instead, I would underline each block with pre-washed 100% cotton batiste for strength. It is very lightweight and isn't hard to quilt...

I use minky to back weighted therapy quilts. I spray baste the minky to a cotton batiste layer to stabilize it, then proceed normally. I straight-line quilt it and have had no problems.
