    Default ISO make ahead Roast Spuds

    Hi Ladies and Gents.

    I usually make Make Ahead Mashed Spuds for Christmas, but this year I am serving Prime Rib and I was thinking of doing Roast Spuds. Do any of you have a good recipe for making them ahead of time? Or par cooking them ahead of time?

    It is just the two of us, but I want to prep as much as possible ahead of time. Other than the spuds I am doing simple steamed veggies. Trifle for dessert, so that is made ahead of time too.

    Having never made prime rib myself, I wonder if you couldn't just put them in the oven with your roast? Of course I am thinking baked potatoes which may be different from the Roast Spuds you are referring to.
    At any rate, hope it works out for you. I gave up cooking that big Christmas dinner years ago, so know what you are talking about.

    Google Jamie Oliver make ahead roast potatoes. You still need to finish them in the oven for 30mins but all the work is done.

    Peel and cut potatoes to required size.

    Boil in salted water for 5 minutes.

    Drain and allow to cool and dry on a tea towel.

    Open freeze on a tray then bag or place in a container.


    When required preheat fat or oil in a cooking tray in a hot oven until oil is hot.

    potatoes one at a time into oil and baste before putting in oven. A sprinkle of salt will help to make the potatoes crispy.

    Cooking time about 30 - 45 mins.

    I too will be making prime rib. Instead of potatoes, I'm making popovers - a lighter starch choice with slight drama. Green beans and stuffed mushrooms complete the menu. ;-)

    Thank you Moira, this is just what I need. I knew there had to be a method to doing them ahead of time.

    I will cook the and the Yorkshire Pud while to roast rests.

    LavenderBlue, I make Yorkshire Pudding too. I am feeding a 23 year old construction worker, he needs his calories.

    Murphy, I use the low and slow method to cook Prime Rib. It is not conducive to great roast spuds, but I get a great au jus and beautifully tender rare meat this way.

    My mom used to just put the potatoes in the same roasting pan as the rib roast. The fat from the meat helped to caramelize the spuds. You can peel and boil for 5 mins. then refrigerate. Cook with the roast.

    when russet potatoes are on sale I buy a big bag and make mashed potatoes with butter,milk and seasonings. When done pack servings in freezer containers and freeze.When we need a side I put frozen container in microwave and heat stirring every few minutes until thawed and hot...we think they taste as good as fresh.
