I'm sick of my own cooking. No...really I am. I am a pretty good cook (if I do say so myself) but I was wondering what do other people cook when they can't decide what they want to eat?? DH and I have the same conversation EVERY day...what do you want for dinner tonight?...I don't know...what do YOU want??? See???? All we do is go round and round. If we can't decide..I usually go to my fall back but really tasty Italian Sausage sandwiches. I'll tell you the recipe if you'll tell me what you do..and of course share the recipe :wink:

Italian Sausage Sandwiches

Saute thinly sliced onions and green bell peppers in a skillet in a little olive oil.

When soft and with that yummy tinge of brown on the onions, remove from skillet and pour in another about 1 TBLsp. of olive oil.

Split however many Italian sausages you would like to eat down the center and open them up. Cook in the olive oil until done. Remove from skillet and pour out the remaining oil.

Return the onions, bell pepper and sausages to the skillet and pour some canned pasta sauce (like Bertolli) over the top. Heat through...serve and enjoy!

We love these on those hogie rolls made by Sara Lee...MMMMM!!!

There are usually just two of us for dinner, if more people come in this is a family favorite. Cook a pound of hamburg with salt and pepper..onion optional. add this to a oven proof dish, add can or frozen corn. Make mashed potatoes, we use instant and this is the third and top layer. I then pop in the oven for 20 min. You can double and triple for more people. There is never any left, its hard not to have seconds.

Spaghetti bake - so easy to customize and make.

Boil noodles.
Mix w/ sauce of your choice.
Mix in any meats you want.
Mix in 2 c shredded mozz, any parm or ricotta you'd like.
Sprinkle w/ cheese on top.

Bake at 450 until the top is "cooked".

My kids LOVE this. I usually use 50/50 marinara and sweet potato/carrot puree. No one knows there's so many veggies in it and it makes the sauce sweeter naturally.

Here is a meal I make that is fast and super easy

Cut bell peppers in half. I cut them long ways they lay better in the dish.
Stuff each half with frozen pre cooked Italian meatballs
Fill each half with spaghetti sauce of your choice. Bake 350º covered until peppers are tender. Sometimes I put a cup of uncooked rice in dish with a can of chicken stock and then add the peppers and bake until rice is tender.

If I'm really stuck for what to cook, I rub brown sugar on a small pork roast along with what ever seasoning I like, (I buy the long one and cut it in half lengthwise) wrap it all around in bacon and bake 350º until internal temp is 150º . Delicious and it goes with any vegetable.

I've got 2 or 3 real favorites:
1. Double up casserole

1 pkg pork chops (I use boneless)
2 lbs. frozen french fries (crinkle cut are my favs)
2 cans cream of soup (I use chicken and mushroom)
2 cans whole green beans, drained
2 cups sour cream, salt and pepper

place in a foil lined 9 x 13 pan, in the following order:
french fries
green beans
soup mixed with sour cream
pork chops
salt and pepper pork chops
cover TIGHTLY with foil, bake for 2 hours at 400 degrees. Enjoy tonight and tomorrow night, Serve with hot rolls.


2. Italian casserole

2 pkg rotini or any ini noodles, I pick the colored ones for more veggies
1 can spinach, drained
1 pkg frozen meatballs or pepperoni
1 large can spaghetti sauce
1 can tomato sauce
1 can tomato paste
1 pkg italian cheese - shredded

place all ingredients in crock pot, cook on low for 8 hours.
DO NOT COOK THE NOODLES BEFORE PLACING IN THE CROCK POT, SAUCE WILL COOK THEM

This will feed 4 for 2 supper meals. Add garlic bread.

3. Oven fried chicken

1 large package chicken drumsticks
1/4 stick REAL BUTTER
salt, pepper, garlic salt, paprika, and flour

line a pan with foil. spray with Pam. place the butter in slices on the foil.
Dredge chicken with flour (add the spices as desired to flour mixture)
I mix mine in a gallon zip lock back, throw in the chicken and DANCE
Place chicken on foil lined pan.
Bake at 400 degrees for 1 hour and 30 minutes. Turn after 45 minutes to assure even browning of chicken.

Make green bean casserole and cook at same time. Mix instant mashed potatoes on stove, add velveeta cheese to potatoes. Wop a tube of instant biscuits and put butter/jelly on table.

I don't have a name for this, but it's easy, cheap, and no clean up:

For each serving, make a good sized ground beef (or chuck or sirloin or turkey) pattie, and place in center of two pieces of foil criss-crossed over each other, large enough to eventually cover it all. Season with whatever - salt, pepper, garlic or onion salt, Worcestershire sauce, Liquid Smoke, A-1, tomato sauce - whatever sounds good. Top with slices of raw onion, slices of raw potatoes, carrots, celery, mushrooms, sliced bell peppers, snow peas, or (again) whatever sounds good. Add a bit of water or maybe red wine. Seal up the foil to create a dome for steam. Put on cookie sheet and bake at 350 degrees for one hour.

Instant meat and veggie dinner, and you throw away the (foil) dish! Enjoy ...

You guys are making me hungry! I posted this "Go To" a while ago:

The Meal*

1 lb. stew meat
1 package dry onion soup mix
1 can cream of mushroom soup
1 small can sliced mushrooms, undrained

Place all ingredients into casserole dish. Cover. Bake 3 hours at 325 degrees. Serve over egg noodles, brown rice, pasta, mashed potatoes, etc. Garnish with chopped parsley if desired.

*My dear grandma called this dish "The Meal." I think it was her favorite! You can use low sodium, low fat versions for the soups and I like it with sliced fresh mushrooms. Just add a little more liquid if using fresh.
